Baking Christmas cookies is something I do every year with my mom. We typically crank up the Christmas tunes, and bake anywhere from 10-20 (depending on how ambitious we are that year) different types of cookies. We laugh and dance and at some point I usually have to go lay down and have a nap because I can’t hang. I knew Christmas baking in Norway would be different then I am used to, and wanted to share that with all of you!
Being away from home during Christmas has been a bit challenging. I’ve never been away from home during the holidays so I knew there would be an adjustment. Even though it has been hard being away from home, I have been soaking up as much of a Norwegian Christmas as I can. We have visited Tromso, the Paris of the North, I am making a traditional Norwegian Christmas dinner tonight (in Norway the big Christmas celebration happens on Christmas eve), and I have been working on making our home Koselig (sort of like cozy), to help with the polar night and winter weather.
I decided I would still do my Christmas baking in Norway, only this time I made only 4 types of cookies and video chatted with my mom during the bakefest. Not quite the same, but I still had a good time.
Christmas Baking in Norway
1. Kingla: a traditional Norwegian Christmas cookie made with sour cream
2. Lemon Biscoitti
3. Clementine Florentines
4. Chocolate Peanut Butter Cereal Cookies
My favorite is the Lemon Biscotti: perfect for tea, or the Kringla: not too sweet and extremely light and soft. Dave’s favorite is the Chocolate PB Cereal Cookies: perfect for kids and husbands.
I love to gift cookies too. While I know there are so many sweets and treats this time of year but nothing quite says I love you or I appreciate you as a tin full of homemade cookies that I promise you, were made with love. These cookies will be gifted our neighbor and Dave’s colleague, Bruno, and our friend who adopted us, Lois.
